Slobodan Simić v srbski Zasavici pridela približno 100 kilogramov cenjenega sira, ki ga uporabljajo kot živilo, a tudi zdravilo.

Na seznamu najdražjih sirov na svetu spletne revije Chef's Pencil je pristal sir, ki ga proizvaja Slobodan Simić v srbskem naravnem rezervatu Zasavica. Sir iz oslovskega mleka stane kar tisoč evrov za kilogram. Glede na to, da te živali dajejo zelo malo mleka (približno 2 decilitra na dan), ki ne vsebuje veliko kazeina, je postopek izdelave sira zelo zapleten. Za en kilogram sira potrebujejo približno 25 litrov oslovskega mleka, vse pa delajo ročno. Letno pridelajo okoli 100 kilogramov tega zelo posebnega sira, piše portal Punkufer.

Zasavica Nature Reserve is run since 1997 by a non profit organization called Nature Conservation Movement Sremska Mitrovica. The reserve is dedicated to the 7000 years long history of human beings in thsi area and preserves nature, flora and fauna in and along the Zasavica River and its channels. Most important is the production of donkey milk with 250 female donkeys. As a result, one may buy here donkey milk cheese (Magareci Sir), the most expensive cheese, worldwide (around 1,000 Euro per kilo). As well, the Mangulica (Mangalitsa) pig finds a refuge, here. Oslovsko mleko ima le en odstotek mlečne maščobe, vsebuje 60-krat več vitamina C kot kravje mleko in ima protialergijske lastnosti. Zanemariti ne gre niti velikega deleža beljakovin, kalcija in omega 3 maščobnih kislin.

Zaradi svoje sestave je sir priljubljen med ljudmi, ki si ga lahko privoščijo. Uporablja se kot zdravilo za bronhitis in astmo ter razne druge bolezni, pa tudi za hitrejše okrevanje po bolezni.

Synthetic chemicals are used only when strictly necessary. Eight people currently tend to the animals and vegetable patch where potatoes, zucchini, tomatoes and other produce are grown. The farm provides fresh produce like milk, yogurt, mozzarella, butter, fresh cheeser. The farm's produce certainly goes directly to the papal household in the Vatican and the rest goes to the Vatican supermarket, where employees of the Holy See can purchase it. The property at Castel Gandolfo is the pontiff's private retreat, and it's a rare privilege to be allowed inside.
